Fun fact- up until about a year ago I HATED chicken and was afraid if I cooked it I would get food poisoning. That had to change when I got married and realized my meat-loving husband wasn’t totally on board with my mostly vegetarian ways. So I put on my big girl pants and learned how to properly cook chicken. Turns out it isn’t nearly as scary as I thought.

I miiiight still wipe down every inch of the kitchen and wash my hands 10 times after I’m done cooking, but hey, baby steps.

Anyways, this recipe is totally quick + easy and involves minimal chicken handling (thank goodness). For this recipe I use whole wheat panko, almond meal, and lots of yummy spices for a nutty twist on traditional chicken fingers.

Instructions
  1. Preheat the oven to 375 degrees. Grease a baking sheet and set aside.
  2. In a medium bowl stir together the almond meal, whole wheat panko, and spices. In a small bowl whisk the egg.
  3. Dredge each chicken tender into the egg mixture followed by the almond meal mixture and place on the baking sheet.
  4. Bake for 20-25 minutes or until the chicken is browned and cooked all the way through.
Recipe Notes

I find it to be cheaper to make your own almond meal by grinding sliced almonds in a coffee grinder or food processor.
