Hey guys! Today we’re making chicken fingers.
Fun fact- up until about a year ago I HATED chicken and was afraid if I cooked it I would get food poisoning. That had to change when I got married and realized my meat-loving husband wasn’t totally on board with my mostly vegetarian ways. So I put on my big girl pants and learned how to properly cook chicken. Turns out it isn’t nearly as scary as I thought.
These days we eat some sort of chicken recipe a couple of nights a week and I’m happy to say that I’ve come to enjoy the taste and i’m not terrified of it anymore. I miiiight still wipe down every inch of the kitchen and wash my hands 10 times after I’m done cooking, but hey, baby steps.
Anyways, this recipe is totally quick + easy and involves minimal chicken handling (thank goodness). For this recipe I use whole wheat panko, almond meal, and lots of yummy spices for a nutty twist on traditional chicken fingers.
